Barbecued Strawberries

This is a great way of serving strawberries – particularly any that are starting to go past their best. A splash of alcohol makes this even more or a treat. |

Ingredients
|
|
Serves 4
- Enough strawberries for 4 people
- About 2 tablespoons caster sugar (depending on tartness of strawberries)
- 3 tablespoons Pimms (or fruit juice)
|
|
|
|
Method
|
- Pre-heat the oven to 160 C or Gas Mark 3 or warm the barbecue.
- Wash the strawberries and remove the stalks.
- Mix the strawberries, sugar and Pimms together.
- Make a parcel out of foil and place the strawberry mixture in the middle. Draw up the edges and roll them over at the top, to create a parcel.
- Cook the parcel on a cool part of the barbecue or in the oven for 15-20 minutes. The fruit should be hot, but still holding its shape.
- Serve with cream or ice cream.
