Barbecued Strawberries

This is a great way of serving strawberries particularly any that are starting to go past their best. A splash of alcohol makes this even more or a treat.


Serves 4

  • Enough strawberries for 4 people
  • About 2 tablespoons caster sugar (depending on tartness of strawberries)
  • 3 tablespoons Pimms (or fruit juice)


  1. Pre-heat the oven to 160 C or Gas Mark 3 or warm the barbecue.

  2. Wash the strawberries and remove the stalks.

  3. Mix the strawberries, sugar and Pimms together.

  4. Make a parcel out of foil and place the strawberry mixture in the middle. Draw up the edges and roll them over at the top, to create a parcel.

  5. Cook the parcel on a cool part of the barbecue or in the oven for 15-20 minutes. The fruit should be hot, but still holding its shape.

  6. Serve with cream or ice cream.

Also delicious with a couple of handfuls of flaked almonds added prior to the cooking stage.
