Coleslaw

Home-made coleslaw is quick, delicious and easy.

It's just a case of grating / slicing the ingredients and mixing them with the dressing.

It tends not to have the aftertaste or "dodgy breath" properties of shop-bought versions, which is a bonus at lunchtime!

It keeps for a day or so in an airtight container.



Coleslaw

Ingredients

1 small cabbage (red or white, depends on your preference)
2 medium carrots
1 medium apple
1 handful of sultanas
100ml natural yoghurt or mayonnaise

Optional extra - handful of mix seeds, to garnish
 

Method

  1. Grate or finely slice (e.g. on a mandolin) the cabbage, carrots and apple.
    It's up to you whether you peel the carrots and apple.

  2. Mix with the yoghurt / mayonnaise and sultanas.

  3. Sprinkle with the fresh seeds, if using.


  4. Enjoy!

Notes & Variations

For a more colourful coleslaw, this is great with red cabbage.

Try serving with some fresh rye bread, to make a complete meal.

For a more traditional coleslaw, swap the apple and sultanas for shredded raw onion. Still delicious, but not quite as good on the "smelly breath" front!

For extra protein, try sprinkling some lightly toasted pine nuts or sesame seeds on top of the finished coleslaw.
Coleslaw without dressing If you think you've made too much, store the ingredients MINUS the mayo / yoghurt in an airtight container in the fridge for up to 2 days.

10/10 This is great! Even better if you add spring onion. The great thing about this recipe is that you can use as a base recipe and add what you want to it e.g. onion etc.
