Mum's Rice Pudding

This recipe isn't, technically, a veg box recipe. But I grew up loving rice pudding you can stand a spoon up in, so I thought you might like it! And you could always serve it with a fruit puree...
 
 

Ingredients

The story goes that my mum had a home economics lesson at school and the teacher told them to make rice pudding. So mum made it the way they did at home - and got detention because the teacher refused to believe that rice pudding could be anything other than runny and thought mum had deliberately messed up the recipe, to make it so firm!

I know people who normally hate rice pudding, who secretly admit to loving this recipe.

Serves 6

200g (8 oz) pudding rice or arborio rice
100g (4oz) sugar
50g (2 oz) butter
750ml (1 ½ pints) milk
 

Method

  1. Preheat the oven to 180 C (Gas Mark 4
  2. Heat the milk, butter, sugar and rice on a hob until just boiling. Transfer to a suitable oven-proof dish.
  3. Put the rice mixture into the oven-proof dish and bake, uncovered, for about 1 ½ hours. Check after 30 minutes and add a little more milk, if it's looking dry.


That's it!

Delicious hot, warm or cold. Watch everyone fight over the creamy, brown skin!

Notes & Variations on Mum's Rice Pudding

If you fancy something a little spicier, try adding 1 teaspoon ground cinnamon and ½ teaspoon grated nutmeg to the mixture at the hob stage.

Denise Tolson's Smoked Haddock and Early Apples
Apples come into season in the UK in August, and there are varieties in season all the way through till the end of March.

Denise Tolson, VegBox Regular and our "Appointed Apple-Afficionado for August", recommends a savoury recipe using smoked haddock and early season apples.
Broad Bean Risotto
This recipe is easy to do, and takes about ½ hour. Though you have to be patient if you're skinning the individual beans.
Broad Beans Rice Salad
This rice salad is spiced up with early summer veggies - fresh tomatoes, broad beans and extra nutrients from kidney beans. The optional dressing adds to the nutty flavour of the brown rice and the whole thing takes just 20 minutes! If you don't fancy a lemon dressing, you can mix in Cheddar cheese instead!
Cinnamon Rice with Peas
This dish makes a great accompaniment to Spinach and Potato Curry (which is also great with cauliflower instead of the potato, by the way).

We have also served it with Chickpea "Chole" with Ginger and Tomatoes.
Pumpkin / Squash and Carrot Soup
This delicious squash soup is vibrant orange and warms up any autumn or winter's day. It works equally well with pumpkin or an orange-fleshed squash and is really easy to make - as well as tasty.
Red Onion Risotto
You can use red onions in place of white onions in most recipes. But here's one that we've developed specially for in-season red onions. It's great with added spinach, black nero cabbage or even kale.

This snack is a firm favourite in our house, especially on the days when we’re in a hurry, the cupboards are a little bare, and there's no time to go shopping! All you need is bread, cheese and apples, after all!
