Warming Pumpkin Soup

This recipe was sent in to us by Shanny, who says "Delicious. I usually bake a loaf of bread in the breadmaker and have fresh warm bread with the soup. I put the bread on to cook in the morning as it takes 2.5 hrs and then make the soup for lunch as it only takes about 20 mins to cook. Great when you have friends over for lunch or a big family gathering."

 
 

Ingredients

1 small or 1/2 large pumpkin - peeled and chopped
2 medium potatoes - peeled and chopped
1 large onion - peeled and chopped
1 stock cube dissolved into a litre of water
2 cloves garlic (to taste)
Approx. 1 teaspn dried oregano
Approx. 1 teaspn curry powder
 

Method

Peel and chop vegetables and put into a large soup pot and cover with water.
Add the dry ingredients and cook on medium heat until vegetables are soft.
Take off the stove and use a wand mixer and puree the soup in the pot until it is all smooth.
Serve in bowls with a swirl of fresh or sour cream and sprinkle with chopped fresh chives or parsley.
