Celebration New Potato Salad

The new spuds herald an end to peeling and removing of suspect black bits from the old spuds! Here’s a recipe to celebrate their flavour in style!

Ingredients
|
|
Serves 4
- Enough new potatoes for 4 people
- Rind of 1 lemon, grated
- Handful fresh parsley or chives
- 1 tablespoon white wine vinegar
- 1 tablespoon olive oil
- 1 bunch fresh red radishes
- Salt & pepper to taste

Method
|
- Scrub the potatoes, if necessary. Otherwise, just wash.
- If they're small enough, leave them whole to boil. Otherwise, chop in half.
- Cook in boiling water for 15 minutes until soft (if whole, this may be nearer 20 minutes).
- Drain the potatoes and allow them to cool a little.
- Chop the parsley / chives finely and then mix with the lemon rind, vinegar and oil. Season with salt and pepper to taste.
- Wash the radishes and trim the leaves and the roots.
- Slice the radishes.
- Mix the potatoes with the dressing. Sprinkle the radishes on top.

|
Either serve immediately or allow the flavours to infuse at room temperature for an hour or so.
Delicious with a fresh rocket or mixed leaf salad, if you've got any.
