Garlic Potatoes |

This is a deliciously simple recipe that can add variety to plain, boiled potatoes.
If you've cooked too many spuds and kept some in the fridge for a day or two, then this recipe can be knocked up with about 5 minutes' preparation. Easy! |

Ingredients |
Serves 4
1kg potatoes
2 cloves garlic, peeled & crushed
30g oil (e.g. olive oil)
Pinch of good quality salt |

Method |
- Cut the potatoes into quarters (if large) or halves (if medium-sized). There's no need to peel, unless you want to. Boil the potatoes for about 10 minutes, until starting to soften. Drain well.
Or:
If you've already got fully cooked potatoes, that's fine.
- Mix the garlic and the oil together with the salt.
- Mix the potatoes well with the oil, to make sure they are all coated.
- Bake in an oven-proof dish at 180 degrees C for 20-30 minutes, until starting to brown.

Time From Cupboard-To-Table |
For raw potatoes: about 45 minutes.
For pre-cooked potatoes: about 30 minutes.
Note: 5 mins preparation time, the rest is in the oven.

Notes & Variations |
Variations:
You could grate some cheese over the top of the potatoes before putting in the oven.
You could experiment with different herbs. Parsley, sage or thyme work really well with the garlic. |
