Super-quick cheating pizza

This super-quick pizza recipe can be rustled up in less than 10 minutes and tastes delicious, either with fresh summer tomatoes or a quick can of Italian chopped tomatoes. Fresh spinach or rocket makes this an easy, quick, healthy treat. See the variations for options with kale, courgette (zucchini) or peas!
 
 

Ingredients

Makes 1 pizza - it's a fab recipe, you might want more than one!


1 tortilla bread

3 tablespoons tinned tomatoes (drained and chopped) or 8-10 cherry tomatoes, squashed

25g Cheddar cheese (grated)

Fresh herbs, such as basil or thyme leaves

A splash of olive oil

A handful fresh spinach leaves, rocket leaves or finely shredded kale
 

Method

  1. Pre-heat the grill while you're preparing the tomatoes.
  2. Heat the olive oil in a frying pan and then add the tortilla. Cook for 1-2 minutes, to crisp the base.
  3. Put the tortilla on the grill pan, top with the tomatoes and the cheese. Add the herbs and the spinach / rocket / kale.
  4. Grill for 2-3 minutes - watch the tortilla doesn't burn.

Notes & Variations on Super-quick cheating pizza

The sky's the limit! Just keep the toppings light and quick to cook.

Fresh peas would look (and taste) great.

Or you could try very finely shredded kale leaves, or thin slices of courgette (zucchini) when they're in season.

When Can I Cook This?

Aubergines (or eggplants if you're from the USA) come into season in the UK in May, and are at their best in June, July, August, September and until mid October.

Kale Pesto Pasta
This is a brilliant way of sneaking kale past fussy eaters. The garlic helps reduce the bitterness of the kale and the pine nuts add a sweet, nutty flavour. It also works well with spinach, chard or black nero cabbage.
