Patty Pan Squash & Red Onion Salsa

This quick and easy dish is a tasty summer treat.

Ingredients
|
4 - 6 medium patty pan squash (about 6-8cm)
1 medium red onion
1 tablespoon balsamic vinegar
1 tablespoon olive oil
1 tablespoon pumpkin or sunflower seeds
1 level tablespoon fresh thyme leaves |

Method
|
- Wash the patty pan squashes. Trim the ends. Chop the patty pans into 1cm (1/2 inch) chunks
- Peel the red onion. Chop it in half. Slice finely.
- Put the patty pans, red onion, balsamic vinegar and olive oil into a dish and mix well.
- Add the thyme leaves and mix.
- Serve sprinkled with the seeds.
