Patty Pan With Toasted Sesame

This is a really quick, simple dish for patty pan squashes, but it's seriously tasty!

And it'll get you from cupboard to table in just 10 minutes.

4-6 patty pan squashes (about 6-8 cm across)
1 generous handful of sesame seeds
a knob of butter
1 level tablespoon fresh thyme leaves (fresh, not dried)

  • Wash and dry the patty pans. Trim the ends. Cut into cubes, about 1cm chunks.

  • In a dry frying pan, heat the sesame seeds until they start to bounce be careful not to burn them. Set on one side.

  • Put the butter in the frying pan and melt. Add the patty pan cubes. Cover and saut for up to 5 minutes, until softening and turning golden brown.

  • Serve sprinkled with the sesame seeds and the thyme leaves.
