Hallowe'en Soup

Recipe Description From Sarah

Me and my flatmate decided to throw together all the veg we hadn't eaten to make this soup. As well as being a heathy option, this soup doubles up as a great Halloween treat for childrens partys as we found it looks a lot like green slime. Great for getting veg into children.




Ingredients

500g potato
180g baby spinach
2 large leeks
1 large onion
2 cloves garlic
2 large parsnips
2 pints veg stock
1tsp english mustard (optional)
salt and pepper (optional)

Method

Chop the potatos and parsnips into quarters and boil in water until the potato starts to break up. Then drain, mash and stir in the mustard. Leave this to one side.

Steam the leeks, onion and garlic together in a splash of water. When leeks begin to soften add the spinach until cooked.

Using a liquidiser, liquidise half of the potato/parsnip mix with a quater of the stock, then add half of the leek/spinach/garlic/onion mix. Add another quater of the stock and liquidise further. Add the rest of the potatoes with the rest of the stock and leek/spinach/garlic/onion mix and liquidise until smooth.

Pour back into a saucepan and reheat when ready to serve.

Salt and pepper can be added to taste
