Autumnal Fish Dish

Ingredients
|
- 1lb of Cod steaks
- 1 small onion
- 4oz mushrooms
- Fish stock
- 4 oz crumbly white cheese
- Packet of Breadcrumbs (or homemade if you prefer)
- Dill
|

Method
|
Dice the mushrooms, onion and fish into bite size pieces (half inch squares). Add these all to a baking dish and sprinkle in some dill. Next cover it all with the stock until the water line is just above the pieces.
Put in the oven at approximately 180 degrees and cook for round about 15 mins.
Next grate the cheese finely (as it is crumbly cheese it will have a similar consistency to the breadcrumbs), once the cheese is all grated mix it together with the breadcrumbs in a bowl.
After the 15mins, take the fish from the oven and sprinkle the cheese/breadcrumb mixture evenly over everything. Put this back into the oven for another 10mins. By this time the cheese and breadcrumbs should have formed a lovely golden “crust”.
SERVING IDEAS
Serve as it is or with a side salad to garnish, additionally some potato wedges accompanied by a little creamy garlic sauce would compliment it well.
