Marinated Mushrooms

This marinated mushroom recipe makes a delicious change and works well with fresh onions. |

Ingredients
|
|
Serves 4
- 500g fresh mushrooms, wiped and sliced
- 1 small onion, peeled and chopped finely
- 1 clove garlic, peeled and crushed
- 30ml olive oil
- 100ml white wine vinegar
- 1 tbsp tomato puree (or 4 fresh tomatoes - see variations
- 1 bay leaf
- Handful fresh coriander leaves, chopped

Method
|
- Gently heat the oil in a large pan.
- Put the garlic and onion in the pan and saute, covered, for 5 minutes, until softened.
- Add the vinegar and bay leaf and simmer for 5 minutes.
- Add the tomato puree and coriander leaves and mix well. Taste and season with salt and pepper.
- Put the mushrooms in a bowl and pour the marinade over them. Cover and leave overnight.
- The next day, remove the bay leaf and then serve (either cold or wam) in bowls or on a bed of salad.

Notes & Variations on
Marinated Mushrooms
|
|
If you've got some spare fresh tomatoes, chop these and add to the onion mixture for the final 2 minutes of cooking time. This gives and even sweeter flavour.
