Minted Sugar Snap Peas (Mange Tout)

This delicious minty yoghurt dressing has the option of adding a lemony twist. It’s really refreshing and complements the flavour of the mange tout. And the great thing is it only takes a few minutes to prepare. |

Ingredients
|
|
Serves 4
- 400g sugar snap peas (mange tout
- 100ml natural yoghurt
- Grated zest of 1 lemon (unwaxed
- 1 tablespoon fresh mint leaves
|
|
|
|
Method
|
- Trim any stalks off the mange tout.
- Steam or cook them for up to 3 minutes, until just tender. Drain.
- Meanwhile, make the dressing:
Mix the yoghurt with the lemon zest.
Finely chop the mint leaves and add to the yoghurt.
- Pour the dressing over the mange tout and garnish with a few spare sprigs of mint.

If you don't like yoghurt, you could use 50ml double cream instead.
