Minted Sugar Snap Peas (Mange Tout)

This delicious minty yoghurt dressing has the option of adding a lemony twist. Itís really refreshing and complements the flavour of the mange tout. And the great thing is it only takes a few minutes to prepare.


Serves 4

  • 400g sugar snap peas (mange tout
  • 100ml natural yoghurt
  • Grated zest of 1 lemon (unwaxed
  • 1 tablespoon fresh mint leaves


  1. Trim any stalks off the mange tout.

  2. Steam or cook them for up to 3 minutes, until just tender. Drain.

  3. Meanwhile, make the dressing: Mix the yoghurt with the lemon zest. Finely chop the mint leaves and add to the yoghurt.

  4. Pour the dressing over the mange tout and garnish with a few spare sprigs of mint.

If you don't like yoghurt, you could use 50ml double cream instead.
