Warm Mange Tout Salad

This recipe uses mange tout (snow peas) in a warm salad. Light cooking can bring out the sweetness of the mange tout and new-season carrots, and the radishes give things a little kick. This side dish takes literally a few minutes to throw together.
 

Ingredients

Serves 4

200g mange tout
200g new-season carrots - baby if possible
About 10 red radishes

 

Method

  1. Trim the ends of the mange tout. Wash well and drain.

  2. Wash the carrots and trim the green stalks. If they're small, leave them whole. Otherwise chop into "baby carrot-sized chunks".

  3. Boil the carrots for 5 minutes, until almost cooked.

  4. Wash and trim the radishes. Cut into small sticks or slice finely.

  5. Add the mange tout and cook for 2 minutes.

  6. Drain the vegetables and serve topped with the chopped radishes.
