Winter Coleslaw

Ingredients
|
Serves 6 as a side
1 kohl rabi
Half a white cabbage
2 large carrots
Half a celeriac (peeled)
1 large onion peeled and diced
Salt & black pepper
6 tbsp mayonnaise
2-3tsp Dijon mustard |

|
Method
|
- Slice and shred the cabbage as finely as possible.
- Slice the carrots, celeriac and kohl rabi into very thin strips. (A mandolin will do this nicely).
- Tip the ingredients to a large bowl and add the onion.
- Season with salt and pepper.
- Mix the mustard with the mayonnaise then add to the mix.
- Leave it to stand for about 15 minutes and serve.
