Oh-So-Simple Jerusalem Artichokes and Sauteed Onions

This truly oh-so-simple recipe was provided by Polly B from Holymoor. How about serving this dish with rice for a substantial meal, or with hunks of bread at lunch time?
 
 

Ingredients

1litre water with juice of 1 lemon added
500g Jerusalem artichokes, well scrubbed
1 large onion, sliced
60g red & green peppers, diced
Salt and pepper
20g unsalted butter
 

Method

Cut artichokes into bite-sized pieces and drop into water with lemon juice in at once.

Bring to boil and simmer for three minutes (they should be tender but not soggy).

Drain and set aside.

Melt the butter and gently sautee the onion, stirring occasionally, for about 10 mins.

Reduce the heat and add the peppers, then cook for two more minutes.

Add the artichokes and cook gently until they are heated through (about two minutes).

Add salt and pepper to taste then serve.
