Gratineed Jerusalem Artichokes

This recipe has been shared with us by Mike and Denise Tolson. In their house, their kids call jerusalem artichokes "FARTichokes"! They tell me that "distressing effects do subside if you eat them regularly - honest." Thanks so much for sharing this with us, folks!
 
 

Ingredients

Serves 4 as a side

450g jerusalem artichokes
25g grated parmesan
35g butter
salt and pepper to taste
 

Method

  1. Preheat oven to 190C/400F/Mark 6
  2. Scrub artichokes and boil for 2 mins
  3. Drain and allow to cool
  4. Cut into slices 12mm thick and arrange in a buttered dish so they overlap, add salt, pepper, cheese.
  5. Dot with butter and bake till a golden crust forms.
