French Beans With Almonds

Toasting the almonds brings out the nuttiness of their flavour and adds a delicious twist to French beans.
 
 

Ingredients

Serves 4

Enough French or green beans for 4 people
A large knob of butter (optional)
A large handful flaked almonds

See notes for lemon variation.
 

Method

  1. Heat a frying pan (dry) and then add the flaked almonds. Heat them for a few minutes, turning often, until lightly browned but not burned. Remove the almonds from the pan, to stop them cooking.

  2. Trim the ends of the beans.

  3. If cooking the beans whole, boil them for about 5 minutes. If you want them in smaller pieces, chop in half and cook for about 3 minutes, until tender. Note: cooking time depends on the thickness of the bean, so it's worth testing.

  4. Drain the beans. Meanwhile melt the butter (if using) in the hot pan and return the beans to the pan. Add the almonds and mix well.

Notes & Variations on French Beans With Almonds

Adding a little grated (unwaxed) lemon zest to the butter gives and even more summery flavour.
