Mediterranean Grean Bean Salad

This salad is simple to make and packed with flavour. Using the earliest French beans of the season makes it a delicious treat. Feta, pine nuts and the dressing give a Mediterranean feel.


Serves 4

  • 300g French (green) beans
  • 100g Feta cheese
  • Handful of pine nuts
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice


  1. Top and tail the French beans

  2. Boil them for 3-6 minutes, until just tender (depends on their size)

  3. Mix together the parsely, olive oil and lemon juice

  4. Drain the beans and mix with the sauce

  5. Serve the beans topped with crumbled Feta cheese and a few of the pine nuts
