Courgette Soup |

What?
Courgette soup? Are you sure?
Yes! Sceptical at first, but now converted.
Amazingly simple and a great way of using and preserving a glut of courgettes.
It even works with overgrown courgettes. So thank you to my friend Jenny for her inspiration on this one! |

Try it - you'll be converted.
So whether you've got courgettes in your veg box for the 5th week in a row, or a glut from your allotment's 15 courgette plants, this soup makes a tasty change.

Ingredients |
Serves 4
1 kg courgettes - any size and colour
250g potatoes (suitable for mashing), peeled or scrubbed
2 cloves garlic, peeled & crushed
1 medium onion, peeled & chopped
30ml olive oil
150g soft cheese (see note below for alternatives)
Handful fresh chives, chopped
Handful fresh summer herbs of your choice, chopped
1 1/2 pints water (or mild-flavoured stock) |

Method |
- Wash the courgettes and chop them into chunks. Cut the potatoes into cubes (smaller than 1 inch).
- Heat the oil gently in a large pan. Add the onion and garlic.
- Gently cook for about 5 minutes, to soften.
- Add the potatoes. Stirr. Cook gently, covered, for about 15 minutes, until about half-cooked.
- Add the courgettes and stir. Cook for about 5 minutes until softened, stirring occasionally.
- Add 1 1/2 pints of water - just enough to cover the contents of the pan. Bring to the boil and simmer gently for 10 minutes, or until the potatoes are soft.
- Remove from the heat and liquidise the soup.
- Add the Cheese & herbs.
- Season to taste with salt & pepper.
- Serve with fresh bread.

Notes & Variations |
Experiment with herb combinations.
We particularly liked: parsley, thyme & chives.
If you want to freeze this soup, do so before adding the cheese. It'll keep longer that way. |
Leaving the skin on the courgettes is a good way to give this soup more colour.
Also, when we tested it, we used a range of large and small courgettes, as you can see.
Larger courgettes contain more water than smaller ones, so the soup can end up thinner. But it's a great way to use them up. |

Yum, I have just made it...i was very sceptical at first but it taste gorgeous, slightly worried about the calorie content with all that cheese though.

I have been making courgette soup for the last 5 years, I tend to use Brie, just float a small piece on top. It is also good using blue cheese, just go easy on the salt when seasoning. |

The soup was very good. I agree the garlic and herbs give a good flavour. However, I did not add the cheese, as I try to cut down on fats. It was still very tasty. I have made several batches and put them in the freezer. |

just cooked this recipe using a huge over grown courgette. It tastes gorgeous, really creamy! i also left out the cheese but sprinkled a bit of grated cheese on top when serving. It is lovely without the cheese tho so can be very low in fat and calories. |

excellent soup, didnt really taste the courgettes, but a good way of getting rid of a large crop, will make again with additions.did not add cheese, but picked plenty of herbs from the farm garden, the whole soup was made with our own produce, beetroot soup next i have heard it is good with orange. thank you for the recipe. |

A good use for all those courgettes that seem to be coming out of the woodwork. Very easy to make as well. As a first time soup maker, the instructions couldnt have been simpler. Going to try variations on a theme next.

Wow - cannot believe how simple and delicious this is. Made it with the low fat greek style yoghurt as suggested - no cheese - this keeps it really healthy but sooo creamy and tasty. My only gripe is the 15 minute cook off of the potatoes at the beginning with no liquid. As soon as they started to catch I added the courgettes and very soon after the stock and then cooked out. Even with blitzing in the blender there was slight texturrre to the courgettes but this did not in any way detract - but even added to how good this soup is. |
