Simple, Steamed Butternut Squash


This is a simple and nutritious way of using butternut squash for a side dish.



Ingredients

1 butternut squash
 

Method

  1. Peel the squash with a potato peeler. Chop off the stalk and flower end. Chop in half and use a spoon to remove the seeds. Chop into 1/2 inch cubes.

  2. Steam in a steamer (or in a large sieve above a pan of boiling water) until soft - about 10-15 minutes.


Serve as a side dish, for example, to accompany a Sunday lunch.

Notes & Variations

Make sure you have removed all the pips before cooking, or these can make the squash taste bitter.

Steaming is the best way to cook butternut squash, as it preserves the vitamins well.

If you prefer, you can cut the squash into 1 cm slices, instead of chopping.
