Katy's Squashy Supper

Ingredients

1 butternut squash halved and seeds removed
Olive oil
Worcestershire sauce
Hummus
Salad leaves
 

Method

Butternut squash halved and seeds removed. Roast in oven (gas 5) with a good drizzle of olive oil for about 30-45mins or until begining to blacken at edges at the same time roast the seeds spread over a baking tray and drizzle with olive oil and a good shake of worcestershire sauce, turn once during cooking. When cooked fill squash cavity with hummus (i used olive and tomato hummus). Serve with salad. YUM!!
