Brussels Sprouts With Nutmeg |

Brussels sprouts are something that most people either love or loathe.
By cooking them carefully, you can avoid the infamous "sprouts-stink" and the nutmeg brings out the best of their flavour.

Ingredients
Serves 4
Enough sprouts for 4 people
Large knob of butter ½ teaspoon grated nutmeg (fresh, if possible)

Method |
- Remove any yellowing outer leaves from the sprouts and trim the ends of the stalks.
- Wash well.
- Steam the sprouts for about 5 minutes (slightly longer, if they're big), until they're just soft, but with some crunch left.
It's important that the sprouts are steamed, rather than boiled, as this helps reduce the smell.
- Drain the sprouts well. Add to a bowl or pan with the butter and cover with the nutmeg. Stir well until all the sprouts are coated.
Serve immediately.

Notes & Variations For Brussels Sprouts With Nutmeg |
| If you don't want to use butter, you can substitute with olive oil (not extra virgin - the flavour would be too strong) or sunflower oil. It helps create a sauce to spread the nutmeg and keep the sprouts moist. |
