Mozarella and Aubergine Baguette

BAGUETTES FILLED WITH AUBERGINE (EGGPLANT) AND MOZARELLA

Aubergines don't have to be reserved for stews, casseroles and bakes! As they are quick to cook and tasty, aubergines also work well as a snack food.

Aubergine and mozarella baguettes make a delicious light lunchtime meal. Add chips and a spicy salsa for a bigger meal.

 
 

Ingredients

Serves 4

1 aubergine, cut into 8 longways slices;
4 thick mozzarella cheese slabs;
½ a jar of sundried tomatoes in oil, sliced thin or 4 fresh tomatoes, sliced;
2 generous handfuls of either lettuce, rocket or spinach, roughly torn;
2 tablespoons of olive oil;
1½ tablespoons balsamic vinegar;
1 garlic clove, minced;
3 tablespoons fresh basil, chopped or torn;
baguette for four sandwiches, cut in half.
 

Method

  1. Brush the aubergine slices with olive oil (both sides), season with salt and pepper and grill until tender (about 10 minutes), turning once after 5 minutes.
  2. For each sandwich, place two slices of the grilled aubergine on the bottom half of each baguette and top with a slab of mozzarella.
  3. While the aubergine is grilling, mix the garlic, oil and vinegar together, add salt and pepper, and then toss in whichever greens you’ve chosen, the tomatoes and the basil.
  4. Finally, divide the mix between the sandwiches, and close each one with the top baguette slice.

Notes & Variations on Mozarella and Aubergine Baguette

Aubergine and mozarella are also delicious stuffed into pitta bread, between doorsteps of granary bread, or on toasted bread.
