Roasted Asparagus

Deliciously simple. Topped with a simple dressing and slivers of Parmesan, this makes a great side dish. |

Ingredients
|
|
Serves 4
- 400g fresh, green asparagus
- 2 tablespoons olive oil
- 75g Parmesan cheese (or equivalent hard cheese
- 1 tablespoon balsamic vinegar
- Salt & pepper to taste
|

Method
|
- Pre-heat the oven to 200C.
- Thoroughly wash the asparagus spears.
- Break off the woody ends. (Not necessary in early-season, small spears). Hold each end of the spear and gently bend it until it snaps. This breaks off the woody part, which is great used in stocks or soups.
- Mix together the olive oil and balsamic vinegar.
- Arrange the spears in a baking dish and drizzle the olive oil dressing on top of them.
- Bake for 15 minutes, until the asparagus is cooked.
- Top with Parmesan shavings (use a fine grater or even a potato peeler for this).
