Roasted Asparagus

Deliciously simple. Topped with a simple dressing and slivers of Parmesan, this makes a great side dish.


Serves 4

  • 400g fresh, green asparagus
  • 2 tablespoons olive oil
  • 75g Parmesan cheese (or equivalent hard cheese
  • 1 tablespoon balsamic vinegar
  • Salt & pepper to taste


  1. Pre-heat the oven to 200C.

  2. Thoroughly wash the asparagus spears.

  3. Break off the woody ends. (Not necessary in early-season, small spears). Hold each end of the spear and gently bend it until it snaps. This breaks off the woody part, which is great used in stocks or soups.

  4. Mix together the olive oil and balsamic vinegar.

  5. Arrange the spears in a baking dish and drizzle the olive oil dressing on top of them.

  6. Bake for 15 minutes, until the asparagus is cooked.

  7. Top with Parmesan shavings (use a fine grater or even a potato peeler for this).
