Bramley Apple Sauce

To accompany our seasonal feature on Bramleys, which are in season from late September through to the end of March, here is a recipe for apple sauce which no household should be without.

Ingredients

1kg Bramley apples, quartered cored, peeled then sliced
100g caster sugar
2 tbsp water
 

Method

  1. Put the apples in a with the sugar and water.
  2. Cover and place over a medium heat.
  3. Once boiling, cook for 5 minutes, stirring after 4.
  4. The mixture should now be fluffy with a few chunks still clearly visible.
  5. Taste the mixture and add more sugar if required.
  6. Leave to cool, divide in half, freeze half in suitable containers and spoon the remainder into a bowl and refrigerate. Should keep for up to a week.


Serve with your cereal, as a great complement to spicy dishes, mixed into lentil bake or with yogurt or ice-cream for an easy dessert.

The Original Waldorf Salad
This classic salad is thought to be the invention of Oscar Tschirky, the maitre d' of the Waldorf Hotel when it opened in New York in 1893.

After the salad became famous and copied in other establishments, it was embellished, most famously with chopped walnuts, and also with grapes. It is sometimes served over salad leaves, and in recent years it has become common for the dressing to be yogurt based - usually beaten with egg yolk, lemon juice, mustard and / or a little light oil.
