Shallots

Shallots Shallots are a member of the onion family, but are sweeter and more delicately flavoured. They are more fiddly to use (more peeling per 100g!), but can be a real treat.

Graham's Rhubarb Pudding
Looking around for different ways to cook rhubarb as we have a lot of rhubarb in the garden,
Ingredients

Method
  1. Wash rhubarb, cut into 3cm / 1" lengths and place in a flan dish covering the base.
  2. In a mixing bowl cream together the butter and sugar. Add the beaten egg.
  3. Mix in the flour and milk, lightly beat then spread over the rhubarb.
  4. Bake for 40/45 minutes in an oven pre-heated to 180C / 350F / Gas4. (Fan assisted 30/35 minutes at 160C).

We've been so blessed with recipe submissions from our readers, and from enthusiastic veg box providers around the country that it's been a while since we've invented a new one of our own.

Last week we received a box that contained carrots, chard, mushrooms, shallots and turnips. We already had a can of mixed beans in the cupboard, garlic cloves, some unfinished goats cheese in the fridge and a big box of quinoa.
