Green Cabbage
Anything from pale to dark green, "green cabbages" (as opposed to white, red or Savoy) have smooth almost shiny leaves, very unlike the loose ruffled leaves of the Savoy. All cabbages have wonderful health benefits and can be enjoyed in an astounding variety of ways.
- In Season?
- Like the Savoy cabbage, green cabbages are in season in the UK from the end of June to the end of February.
- Cook?
- The less you cook cabbage, the less smelly it will be, and the more nutritious it will be, so the key really is to cook it lightly - stir-fries and steaming are the best bets.
